Hey loves, back again with a What Vegans Eat In a Day post. As mentioned in my previous What Vegans Eat In A Day post, I have been eating plant-based/vegan meals for over three years. Hence, the reason for the start of this series, What Vegans Eat In A Day. I wanted to share plant-based/vegan meal ideas.

If you are wanting to take a break sometimes from eating meat or need some plant based/vegan meal ideas, this series is for you.
I mentioned this throughout this series, but if you are new here, I will discuss it briefly again. Every morning I have my lemon water to start my day. I prepare it at night and let it sit on my nightstand in my hydro flask.
My hydro flask is fill with 32 ounces of water. It makes it so easy and convenient. If you want to accomplish a goal easily, you put things in place to try to make it easy and convenient.
I sips tea throughout the day as a pass time.

Let’s get to today’s meal ideas
Back again with another quinoa breakfast bowl
Quinoa Breakfast Bowl
Ingredients
1 cup cooked quinoa
5 pieces dark chocolate
few raspberries
few splashes of oat milk
sprinkles pomegranate
I already had some quinoa cooked. I meal prepped it and keep some in the refrigerator.
I place all the ingredients above in a bowl and fix it up to my liking.
Viola, breakfast is ready

Tempeh Avocado Sandwich with Baked Sweet Potato Fries
Tempeh Avocado Sandwich with Baked Sweet Potato Fries
Ingredients
3 slices tempeh
2 slices toasted Ezekiel bread
vegan mayonnaise
1/2 tomato
a few pickles
1/2 avocado
romaine lettuce
1 slice smoked gouda vegan slice cheese
1 sweet potato
garlic powder
smoked paprika
a small sprinkle of olive oil
Steps
I cut three slices of tempeh and let it be cooked in vegetable broth for about 25 minutes to get the bitterness out of it. After you get the bitter taste out of it, it will take any season you add to it easily. I usually let this take 30 minutes, but since I am sautéing the tempeh for a couple of minutes after. I cut the five minutes out.
Next, I sauteed the tempeh for a couple of minutes with coconut aminos, seasonings, and a couple of tablespoons of vegetable broth (instead of oil).
After I put the tempeh on, I cleaned and cut up the sweet potato to make fries. I seasoned the sweet potato fries with smoked paprika, garlic powder, and a small sprinkle of olive oil.
Next, I put the sweet potato fries in the oven. I let them cook for about 30 minutes.
I toast the bread and melt the cheese on the bread. Next, I prepare my sandwich with the ingredients above. I cut the sandwich in half and place one half on the plate with the sweet potato fries. I saved the other half for a snack later.
Up next is Dinner. I have a vegan chili recipe already on the blog from scratch. Sometimes, you don’t have a couple of hours to spare to prepare some chili. Today’s Vegan Chili recipes include a shortcut using Amy’s Organic Chili.
Vegan Chili

Ingredients
1 can Amy’s Organic Chili Low fat Medium
I can Rotel
Vegan Shredded Cheddar Cheese
smoked paprika to taste
chili powder to taste
black peppercorn to taste
1/2 chopped onion
1/2 chopped red bell pepper
1/2 chopped orange bell pepper
chopped garlic to taste
cilantro to taste
1 lime squeeze
First, I clean and chop all the veggies. Next, I get a saucepan and place Amy’s Organic Chili with the chopped veggies, Rotel, and seasonings in it. I let it cook for about 25- 30 minutes. It gives the veggies and seasonings time to blend in with the chili.
Afterward, I place a serving of the chili in a bowl and add shredded vegan cheese, avocado, and cilantro on top.
Viola, cozy meal ready to enjoy.
This is enough for two servings. You can save some for later.
As I mentioned in the last post, I don’t share specifics about the snacks I have for each day. I do not want anyone to get the idea that they should consume the number of calories I consume.
Everyone has different needs when it comes to nutrition. There are so many factors to consider regarding how many calories a person should consume daily. I share these to give ideas to make some meatless meals.
