I have already mentioned in previous blog posts how I drink lemon water first thing in the morning. It is a must.
If you are new here, let me catch you up real quick. Every night before bed, I prep my lemon water in my hydro flask. It conveniently sits on my nightstand every night.
My hydro flask has 32 ounces of water in it. Before I get my morning started, I have already consumed 32 ounces of water thanks to my hydro flask. Can I get a high five?
I love tea. So, throughout the day you can catch drinking on my tea of choice.

Today’s breakfast includes a tofu scramble. I sparingly eat tofu. When it comes to soy, I mostly eat tempeh. Both are high in protein, but tempeh is said to be a healthier option due to it been fermented.
When I dabble in tofu, this is how I prepare it. I eyeball these ingredients.
Tofu Scramble

Ingredients
firm tofu
spinach
red bell pepper
orange bell pepper
onion
tomato
vegetable broth
turmeric
black salt (gives egg flavor)
picante sauce
avocado
First, I press and drain all the water out of the tofu.
Next, I clean and chop the veggies. I sautéed the veggies in vegetable broth for a couple of minutes.
After the veggies cook for a couple of minutes, I crumble the tofu and add it to them. I also add turmeric.
I let everything cook together for about five minutes. I cut a few slices of avocado.
After I plate the tofu scramble, I add the avocado and Picante sauce. Lastly, I sprinkle the black salt. Viola, food is ready.
Tip: Add black salt when you are getting ready to eat the tofu scramble to taste the egg flavor. If you add it while cooking, the heat eliminates the egg flavor.
Lunch was simple and to the point. It was a quick Get in my belly moment. I had cooked black beans and rice in refrigerator. So, I made a Chipotle Copycat Burrito Bowl. My burrito bowl varies depending on what is in the refrigerator.

Ingredients
1 cup cooked black beans
1 cup cooked brown rice
1/2 tomato
handful of shredded lettuce
sprinkles of nutritional yeast
sprinkles of hemp seeds
1 lime
cilantro to taste
1/2 avocado
I heated the black beans and cooked rice. I plated them in the bowl first (see middle picture above). Next I added all of the other ingredients on top ( see first and last pictures above). Lastly, I squeezed lime on top.
Quick & fulfilling lunch
Dinner was late. So it was just protein and veggies. This meal usually consist of a carb too, but it was late. I try not to eat carbs late in the evening.

Barbecue Tempeh with Garlicky Asparagus
Ingredients
5 slices tempeh
8 asparagus
1/2 cup vegetable broth
just enough sugar free barbecue sauce to brush on tempeh
black peppercorn to taste
Everything but the Bagel Sesame Seasoning to taste
minced garlic to taste
sprinkles of parsley
First, I cut up tempeh and put it in a small pot with vegetable broth. I let it cooked for about 30 minutes to get the bitterness out of it. Afterward, it is easy for it to take on whatever you seasoning you like.
During the last 15 minutes of the tempeh cooking, I washed, trimmed, & cooked the asparagus. I brushed them with vegetable broth and added the minced garlic. Next, I put them in the oven.
Lastly, I plated the food. Viola, dinner is served.
I do not share my exact snacks in these blogs because I don’t want to give anyone an impression of how many calories they should consume daily.
The reason being, everyone’s nutritional needs are different. There are so many factors to take into consideration when it comes to how many calories one should consume daily.
That is why I only share meal ideas and not specific snacks.
