Okay, let’s get to it.
If you have been following this series on the blog, you already know that it is a must to start my morning with lemon water. I prepare it the night before with my hydro flask. My 32 oz. hydro flask joins me every night on my nightstand.
It helps me to drink 32 ounces of water in the morning. Yay!!
Throughout the day, sipping on a tea of my choice is one of my daily joys.

Have you heard of quinoa? I am sure you have. What about quinoa for breakfast? Hmmm. Well, breakfast includes quinoa. When I tell ya, it was delicious. It was delicious!
Quinoa Breakfast Bowl

Ingredients
1 cup cooked quinoa
4 pieces dark chocolate
1/2 banana
drizzle of maple syrup
2 tablespoons dairy free yogurt
few splashes of oat milk
sprinkles pecans & cranberries
I meal prepped quinoa. I had some in the refrigerator. So, it was already cooked.
This meal was quick and simple.
I just place all the ingredients above in a bowl and dress it up to my liking.
I only use a few splashes of oat milk because I didn’t want it soupy.
Viola, breakfast is served.
Next up lunch. Another quick and simple meal.
Black Beans Avocado Salad
Black Beans Avocado Salad
Ingredients
1 cup cooked black beans
1/2 avocado
1 tomato
3 handfuls of spring mix
sprinkles of vegan parmesan cheese
my homemade Italian dressing
1 lime
I meal prepped black beans. So, I had some in the refrigerator. I heated 1/2 cup up.
I clean and cut the tomato and avocado.
In a bowl, I prepared the salad with all the ingredients above.
When it was time to eat, I added the dressing & squeezed the lime all over the salad. I will lime everything if I could lol.
Stir-fry Tempeh & Veggies with Brown Rice
Stir-Fry Tempeh with Veggies & Brown Rice
Ingredients
2 slices crumbled Tempeh
1/3 cup chopped red Bell Pepper
1/3 cup chopped orange Bell Pepper
1 handful Broccoli
1/3 cup chopped onion
6 Baby Corn
1 cup cooked brown Rice
1/2 cup Vegetable Broth
Everything But the Bagel Sesame Seasoning to taste
2 chopped garlic cloves
Black Peppercorn to taste
Coconut Aminos to taste
Tip: Coconut Aminos is a healthy alternative for soy sauce
First, I cut up tempeh and put it in a small pot with vegetable broth. I let it cooked for about 30 minutes. This helps get the bitterness out of it. Then, it will take on the flavor you season it with better.
During the last 15 minutes of the tempeh cooking, I washed & cut up the veggies and garlic. I put them in a saucepan with vegetable broth, a splash of coconut aminos, and seasonings (Everything But the Bagel Sesame Seasoning & Black Peppercorn).
After the tempeh is finished, I crumbled it up and add it to the saucepan with the veggies, vegetable broth, coconut aminos, and seasonings. It will take on the all the flavor created in the saucepan.
Brown rice is already cooked because I keep some in the refrigerator. 1 heated up the brown rice. Next, I dress the plate with all the ingredients prepared.
Viola, dinner is served.
