During this time of the year, chili always sound like a great idea. When you don’t have a couple hours to prepare chili from scratch, here is a quick vegan chili recipe with Amy’s Organic Chili to stay warm.
Vegan Chili
Ingredients
1 can Amy’s Organic Chili Low fat Medium
I can Rotel
Vegan Shredded Cheddar Cheese
smoked paprika to taste
chili powder to taste
black peppercorn to taste
1/2 chopped onion
1/2 chopped red bell pepper
1/2 chopped orange bell pepper
chopped garlic to taste
cilantro to taste
1 lime squeeze
First, I clean and chop all the veggies. Next, I get a saucepan and place Amy’s Organic Chili with the chopped veggies, Rotel, and seasonings in it. I let it cook for about 25- 30 minutes. It gives the veggies and seasonings time to blend in with the chili.
Afterward, I place a serving of the chili in a bowl and add shredded vegan cheese, avocado, and cilantro on top.
Viola, cozy meal ready to enjoy.
This is enough for two servings. You can save some for later.
