Hey loves, stopping by with a What Vegans Eat In A Day on the blog today.
Since I have been eating plant-based/vegan meals for over three years, I started a series on the blog, What Vegans Eat In a Day to share plant-based/vegan meal ideas.
If you are looking for some new plant-based/vegan meal ideas or you want to take a break from meat sometimes, this series is for you.
Feel free to adjust ingredients to your liking. I look at recipes as a starting point or for inspiration. You can omit and add whatever you like. We all have different taste buds.

Today is a light day of eating
Nature’s Breakfast Bowl
Nature's Breakfast Bowl
oat milk
strawberries
blackberries
blueberries
cranberries
walnuts
I just place all the ingredients above in a bowl and dress it up to my liking
Result is a quick breakfast. I usually add hemp seeds but I was out of them
Lunch – Lettuce Tacos with Pumfu
If you are looking for another plant based protein, check out Pumfu. It can be used like tofu, but it is soy free.
It is high in protein. It is made out of only water and pumpkin seeds.
Lettuce Tacos with Pumfu
Ingredients
Pumfu
lettuce
tomatoes
fresh jalapeno
color bell peppers
garlic cloves
splashes of vegetable broth
cilantro
Wash all the veggies.
Next, I sautéed the peppers and garlic cloves with seasonings in vegetable broth. I used just enough vegetable broth to sauté everything to my liking.
Afterward, I added the pumfu and let all the flavors blend. Lastly, I prepare my tacos with all of the ingredients.
Dinner – Chickpea Pasta
This recipe is similar to the pasta salad recipe I shared on What Vegans Eat In A Day Vol 4. You can click link for recipe. The only difference is that I used chickpea pasta instead of red lentil pasta.
Some of the the veggies may be different, and I didn’t used Dulse granules.
I eat snacks:
between breakfast & lunch
between lunch & dinner

Whoa! I’ve never heard of Pumfu before! May I ask what grocery store you found it in?? Also, beautiful blog! I’ve been trying to consume less animal products; I appreciate your posts!
