Do Vegans Eat Eggs?

Do vegans eat eggs? No. There are substitutes for eggs.


It depends on what you are cooking. You can use bananas if you are baking bread or muffins.

For pies, you can use cornstarch. Another substitute in baking can be flaxseed mixed with water.


Let’s talk about a breakfast recipe for a brief second. If scrambled eggs are your jam for breakfast, check out this recipe below.


Tofu or pumfu and black salt can fit the bill if you are looking for an alternative to eggs for breakfast. Tofu gives you the texture of eggs, turmeric gives you the yellowish color, and black salt gives you the egg flavor.


You can switch out the tofu for pumfu if tofu is not your thing. Pumfu is another plant-based protein, and it can be an alternative to tofu.

Ingredients

firm tofu

spinach

red bell pepper

orange bell pepper

onion

tomato

vegetable broth

turmeric

black salt (gives egg flavor)

picante sauce

avocado

First, I press and drain all the water out of the tofu.

Next, I clean and chop the veggies. I sautéed the veggies in vegetable broth for a couple of minutes.

After the veggies cook for a couple of minutes, I crumble the tofu and add it to them. I also add turmeric.

I let everything cook together for about five minutes.  I cut a few slices of avocado.

After I plate the tofu scramble, I add the avocado and Picante sauce. Lastly, I sprinkle the black salt. Viola, food is ready.

Tip: Add black salt when you are getting ready to eat the tofu scramble to taste the egg flavor.  If you add it while cooking, the heat eliminates the egg flavor.

I didn’t put exact measures. Sometimes, I go by feeling. As always, feel free to adjust ingredients to your liking. I look at recipes as a starting point or for inspiration.  You can omit and add whatever you like. We all have different taste buds.
